This Chef of 27 years old has more than 10 years experience: after graduating in Troyes, where his teacher Chef Bertrand Bernaudat transmits him with his passion for cooking, he passes under the command of Chief Konsawa (former Chef of Savoy in London and Sabatini in Florence).
Then, he traveled throughout the world to get inspirations from traditional cuisines. His cuisine is refined, he plays with textures, acidulous, temperatures and flavors of products and likes to associate new products.
Every day, in addition to the menu that changes with the seasons and his feelings, he proposes a starter, main course and dessert of the day based on a “return of the market menu“.
